I did have just a little leftover sweet corn today--but it was planned. I wanted some to add to salsa and black beans and rice for a side dish. You can take leftover sweet corn and just wrap it up and refrigerate then use it within 2 or 3 days in any dish that needs corn. Take a sharp knife and cut the kernels off the cob. I used to have a canning gadget to do that with--but a knife works fine. You could freeze it-- but I think its much better if you use it in a lunch or side dish or soup. Toss it in a chili or a rice dish or add it to a wrap or salad. Or just reheat it in the microwave and eat it as is. Leftovers are far better lunches than 'fast food'.
